Schnabeltier creamery winery RochesterRapidView LLC, a Rochester-based environmental technology company, is finding success in diversifying by opening Schnabeltier creamery and winery.

Matthew Sutton, vice president of sales and marketing, says the company’s equipment for cheese-making came from the Netherlands and the milk they use for their products is local. He hopes that the venture will help attract tourism to Fulton county.

Thanks to the growing movement of consumers wanting locally sourced, farm-fresh foods, businesses such as Schnabeltier have found success with specialized products and market niches. They are producing up to 500 pounds of hand crafted artisanal cheese every day and processing several varieties of wines.

Schnabeltier’s products are available in its retail store at 491 Apache Dr., Rochester from 10 a.m. to 6 p.m. Monday through Thursday, 10 a.m. to 8 p.m. Friday and Saturday and noon to 4 p.m. Sunday. Several regional restaurants, supermarkets, farmer’s markets and specialty food shops have also picked up the cheeses and wines as well.

RapidView was originally founded in 1991 as R&R Visual, and is a supplier of sewer pipeline maintenance products.
